Ishikari Nabe
A traditional dish made with Hokkaido salmon, this hot pot is a staple among fishermen along the Ishikari River to warm themselves during the cold season. The miso-based soup can be customized with toppings like kimchi, sansho pepper, or grated cheese for added flavor.
Bouillabaisse
One of the world’s top three hot pots, this hearty dish features cod and clams freshly caught during Hokkaido’s winter. The rich saffron and garlic-infused broth will awaken your appetite and warm your heart.
Hot Pot
This authentic spicy hot pot features a chicken-based broth seasoned with Chinese pepper and chili. The numbing spice and fiery heat warm you from within. Pair it with plenty of vegetables, Rusutsu pork, and your choice of toppings for a bold and flavorful experience.
A Sustainable Approach to Hot Pot
These hot pot dishes incorporate an abundance of fresh ingredients nurtured by Hokkaido’s land and sea. Locally sourced salmon, radishes, carrots from nearby farms, tofu from Rusutsu Village, and other regional produce not only highlight the area’s bounty but also contribute to reducing food waste and promoting community revitalization. By choosing your own ingredients, this initiative also minimizes leftovers, offering a sustainable and satisfying dining experience.
