Hokkaido is surrounded on all sides by the sea and has been prosperous in fisheries since ancient times. The seafood landed by Hokkaido fishing boats accounts for approximately 1/4 of Japan's total catch. As the severe cold sets in, fish living in the cold sea naturally firm up, and because of the winter chill and spawning, they store energy as a lot amount of fat. This makes it a delicious season with rich flavors.
