Winter in Hokkaido is the best season for seafood.

This jet-black paella, made with squid ink, brings together the umami of scallops, clams, squid, and shrimp. Deep-Fried Atka Mackerel (Hokke)
While Atka mackerel is usually grilled or fried, deep-frying it results in tender, fluffy meat that pairs perfectly with drinks. It’s also mild and easy to enjoy for children or those who are not fond of fish — a truly addictive treat once you start eating.
Other seafood delights include Grilled Scallops with Butter and Soy Sauce, Braised Whelks, and Salmon Terrine with Aurora Sauce.
